Thassos (Throumba)

They come from the variety Throumba and named after the island Thassos in Northern Greece where they are cultivated. Small, black olives with a wrinkled skin, salty with a chewy texture, rich in tocopherols. The fruits are kept in the trees till full maturation, until they get wrinkled. Afterwards, they are treated in layers of salt.
