They belong to “Conservoelia” variety. Green-yellow color, round to ovalshape, with thin, elastic and resistant to shriveling skin, consistent texture and buttery flavor with bright citrusy notes. The younger sibling of the Amfissa Black Greek olives, they are collected earlier when they are semi-ripe.
