They belong to “Conservoelia” variety. The most famous are “Amfissa” black olives, named after the region they are cultivated, in central Greece. Smooth very tasty pulp, soft texture, round shape and deep purple color which distinguishes them from black oxidized olives. Their flavor reminds of the red wine because of the natural yeast present on the olive’s skin, being an excellent source of monounsaturated fatty acids.
