Dehydration is done by the use of geothermal energy, in mild conditions of temperature (55 – 57o C) and for a relatively long time. This type of treatment maintains the color, the aroma of tomato and nutrients, avoiding the thermal shock that causes destruction of the plant cell. In the final product does not add additional salt, while energy saving is important.
