Rice with leeks and olives
2, 3 leeks chopped 1 big onion finely chopped 2 carrots grated 1 cup of rice 1 cup of water 200 g kalamata olives pitted 1 cube of Maggie Oil for frying In a frying pan put little extra virgin olive oil then add the leeks, the onion and the carrots and allow to brown.
